Our family LOVES these creamy cucumbers. Yes, you read that right. Extremely simple recipe! Only three ingredients. Simple cucumber recipe.

With warmer weather around the corner, it’s time to enjoy the fresh flavors of seasonal produce. Does anyone else get excited by all the delicious fruits and vegetables that come into season in the summer?

One of my favorite staples is cucumbers, which can be enjoyed in a variety of ways from salads to sandwiches. Today I want to share with you an easy but unique dish featuring cucumbers, Creamy Cucumbers with Miracle Whip

Not only is it flavorful but it’s also incredibly easy – perfect for busy weeknight dinners or impromptu summer cookouts. This creamy technique will become one of your favorite go-to dishes!

Cucumbers can be a Delicious Salad, Side Dish, or Snack

Tonight, I came home from work late and I stopped at the store before coming home. It is spring here and that means it is time for summer type food. I saw the English cucumbers and just had to get some.

My daughter chose cucumbers over pizza tonight…we haven’t had these for a few months now. What a treat.

Cucumbers are high in water and low in calories, fat, cholesterol, and sodium.

Pole Cucumbers versus English Cucumbers

Common Cucumber Readily Available

Pole Cucumbers are often found year-round in our local grocery stores. While I have used these in many recipes and salads, they are not my first choice.

Why? Because these are waxy, thick-skinned, extra watery, and a little bitter. I find that if I don’t remove the outer skin, their bitterness can take over a recipe. However, when the skin is removed, then they are a bit bland.

Therefore, they are not my first choice. I will get them if there is nothing else or they are the freshest cucumber in the store.

Often those cucumbers I will peel, cut in half, and cut out the seeds as I think the seeds are too big for my preference. On the other hand, if there are fresh English cucumbers near by, I grab those instead.

Why Do I Like English Cucumbers?

English Cucumbers; I just happen to like them better because they have a thinner skin, smaller seeds, and are a bit crunchier than the Pole Cucumber. There is also like the uniformity of the cucumber.

The English cucumber has a thin layer of plastic to protect it. I believe that is to protect it a bit more because the skin is a bit thin. Sometimes I peel them and other times, I do not peel the cukes.

This cucumber is less bitter because of the thinner skin; therefore, they are perfect for salads or this delicious recipe.

Why Miracle Whip?

Well, I must admit, I do not like creamed cucumbers with dill, or vinegar, or cream, or milk. I am sorry if I have offended someone. It is just my taste buds talking. So, I made this recipe many years ago and it has become a family favorite.

Quick and Delicious Salad Family Recipe

These creamy cucumbers with Miracle Whip can be done in a snap and are great for an appetizer, side dish, salad, potluck. They do last about 1 day in the refrigerator. I am not sure beyond that as they just do not last in my house that long.

My personal preference is to have cherry tomatoes with my creamy cucumbers. The rest of the family does not, but I do. So, I show in the picture how I eat mine with the cherry tomatoes on the side.

Sometimes there is a strong debate on which one to use. I have successfully used both the Miracle Whip and Mayonnaise in this recipe interchangeably. Use the one that makes you happy. Life is too short to stress over which one to use.

Can you Make cucumber Salad with Yogurt?

Yes, you can use a Greek yogurt in place of the salad dressing. Another option it to use part of the salad dressing and Greek yogurt together.

How to Make the Creamy Cucumbers with Miracle Whip

It takes just three ingredients to whip up this quick salad.

Cucumbers. If I use the English cucumbers, there is no need to scoop out seeds or salt the cucumber slices ahead of time to let the excess water drain out. Sometimes, I peel the cucumbers all the way before slicing. Other times, I partially peel them. It really depends on the look of the salad for the day.

Miracle Whip or Mayonnaise. I use Miracle Whip Salad dressing. However, as I mentioned, you can swap the salad dressings interchangeably in this recipe or use Greek Yogurt.

Granulated Sugar. It just brings the whole salad together.

How to tell if a cucumber is good?

When determining if a cucumber is good, here are some factors to consider:

Appearance: Look for a cucumber that has a vibrant green color. Avoid cucumbers that are dull, yellowish, or have soft spots or bruises. The skin should be firm and smooth.

Texture: Gently squeeze the cucumber. It should feel firm but not overly hard. A good cucumber will have a crisp texture.

Size and Shape: Cucumbers come in various sizes, so choose one that suits your needs. However, regardless of size, it should feel heavy for its size. Avoid cucumbers that are excessively small or excessively large, as they may have texture or flavor issues.

Smell: Give the cucumber a sniff. It should have a fresh, mild aroma. If it smells sour or unpleasant, it may be a sign of spoilage.

Taste: If possible, taste a small piece of the cucumber. It should have a refreshing, slightly sweet flavor. If it tastes bitter or has an off taste, it may not be good.

Organic vs. Conventional: Consider whether you prefer organic or conventionally grown cucumbers. Organic cucumbers are grown without synthetic pesticides or fertilizers, but they may be more expensive.

By considering these factors, you should be able to identify a good cucumber that is fresh, flavorful, and enjoyable to eat.

Ingredients

  • 1 Cucumber English cucumber peeled and sliced thinly
  • 2 Tablespoons Miracle Whip Make the tablespoons heaping
  • 2 Tablespoons granulated sugar Make the tablespoons heaping

Instructions

  • The English cucumbers come in the shrink wrap plastic. Remove the plastic and peel the green skin. I think if you don’t remove the skin, it gives the cucumbers a little bit of a bitter taste. You could certainly leave the skins on, then I would wash and dry off the cucumbers before slicing.
  • Slice the cucumbers thinly. If some of the slices seem kind of big, you can cut them in half as well to make it easier to eat.
  • Add the Miracle Whip and Sugar. Stir.

  • Let sit about 3 minutes for the sugar to dissolve. Enjoy!

Make Ahead Garden-Fresh Recipe

Make this side dish ahead of time. In fact, it is best if you can wait an hour or two before serving as the flavors will combine a bit better. Make sure to refrigerate.

Can This Salad be Stored?

Yes, it can be stored in an airtight container up to five days in the refrigerator. However, due to the water in the cucumbers, the salad dressing will have a thinner consistency. They still taste great though.

My Mother made these for years. I however have made a bit of a Variation. I use a Zesty Italian Salad Dressing to give them a bit of Boldness. Onions and Cucumber sliced to desired thickness. Add Miracle Whip and Salad Dressing to Taste. This will thin the Miracle Whip to make a nice Creamy Coating.

Thank you. I can eat a whole cucumber with this sauce. I do love to have the cherry tomatoes with it too. Sometimes, when tomatoes are in season from the garden, I will cut up a beef steak tomato and add that to the cucumber and sauce. Enjoy!
