  • Cauliflower
  • Cheddar Cheese
  • Dried Berries
  • Pecans
  • Bacon
  • Red Onion

Salad Dressing

  • Mayonnaise
  • Sour Cream
  • Rice Vinegar
  • Granulated Sugar
  • Salt
  • Black Pepper

Cook the bacon in a skillet until crispy. Cool and drain. Crumble into bite-size pieces.

In a large bowl, combine broccoli, cauliflower, cheese, dried berries, pecans, bacon, and onion.

In a separate bowl make the mix the salad dressing ingredients, mayonnaise, sour cream, rice vinegar, granulated sugar, salt, and pepper.

Pour the homemade dressing mixture over the salad ingredients and gently stir to combine.

This salad may be served immediately.

  • 3 Cups Broccoli about 12 ounces or 1 head of broccoli chopped
  • 3 Cups Cauliflower about 12 ounces or 1 head of cauliflower chopped
  • 1 Cup Cheddar Cheese Shredded
  • 2/3 Cup Dried Berries I used a mix of cherries, blueberries, and craisins
  • 1/2 Cup Pecans Chopped
  • 1 Cup Bacon Cooked and crumbled about ½ pound
  • 1/3 Cup Red Onion Diced into small pieces

Salad Dressing

  • ¾ Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 2 Tablespoons Rice Vinegar
  • 3 Tablespoons Granulated Sugar
  • ½ Teaspoon Salt
  • ½ Teaspoon Black Pepper

Instructions

How to Store Cauliflower in the Fridge?

Store raw cauliflower wrapped loosely in a plastic bag. It is best to have a few holes in the bag to allow moisture to escape. Placing a paper towel near the stem will help absorb any moisture and keep it away from the head. Additionally, placing the stem side down will keep the moisture from settling on the florets. Dampness will cause the deterioration and cause the cauliflower to spoil faster. So, keep it cool and dry.

How Long Does Cauliflower Last in Fridge?

Cauliflower can last up to five days in the refrigerator if you keep it dry. It is best not to wash until you are ready to use it. I like to store mine in the vegetable crisper drawer. If you are like me and only go shopping once a week

How to Store Broccoli

Since broccoli is a robust vegetable that loves the cooler weather, it stores well in the refrigerator. Keep it dry and loosely covered in plastic wrap or a plastic bag that has is not sealed. Just like cauliflower, broccoli will spoil fast if exposed to moisture. Therefore, store in a crisper drawer with the stem side down to reduce the chance of moisture accumulating on the head. If stored correctly, broccoli should last 5-7 days in the refrigerator.
