Everyone just raves about how much they love it! Also, if you compare this coleslaw to the grocery store coleslaw, you will find that often, the grocery store coleslaw is bitter. That does not appeal to me at all. This coleslaw is creamy with a bit of sweetness. It goes well with pulled pork sandwiches, Thanksgiving dinner, Christmas dinner, or just as a side dish at a pot luck or picnic. However, it is so easy to make, it could be served any day of the week.
Bagged or Shredded Cabbage
You can use a pre-shredded cabbage-the size that is about 14 ounces. Or, you can shred your own cabbage and it can be red or green cabbage or a combination of the two. The cabbage can be shredded a few days ahead and stored in the refrigerator until you are ready to make the coleslaw. The dressing can be made ahead of time too. I generally add the dressing to the cabbage about 1 hour before it is to be eaten. If there is any left over, it will keep in the refrigerator for a day or two.
