My husband’s favorite side dish is candied carrots. Many, many years ago, when I was first married I had the opportunity to try my hand at making candied carrots. Now almost 40 years later, I have made this side dish countless times over the years.

Don’t wait for a special holiday to make this great-tasting and easy side dish.

One Pan for Easy Cleanup

If you are like me, you have scant time to get meals on the table for your family and even less time to do the dishes and clean up. When you read a number of recipes, it either calls for boiling the carrots until tender or roasting them in the oven. This recipe does not call for any of that. One pan is all it takes.

Options

I must say that maple syrup is my favorite method of creating the candied glaze for this recipe, However, brown sugar is delicious as a glaze too. The brown sugar will caramelize just like the maple syrup. Remember, I live in the country and if I run out of something on a weekend, I need to run half an hour to the nearest grocery store. Who wants to do that? So, often, I will improvise and that is now always a bad thing…new recipes are created.

Adding a ½ cup of coarsely chopped roasted pecans is a great addition to this side dish. Another great addition is 1/2 cup of raisins. If they are added in the last 2-3 minutes of cooking, they will soak in the pan liquid and plump a bit. Be creative and enjoy!

Ingredients

  • 2 Tbsp. olive oil
  • 32 Oz. Sliced Carrots 2 small bags or you can slice your own too
  • 2 Tbsp. butter
  • 1/2 Cup Maple Syrup can also use same amount of brown sugar if desired
  • salt to taste
  • pepper to taste

Instructions

  • Add olive oil to a non-stick pan and add two bags of sliced carrots. Cover and cook on medium-high until fork tender. Stir occasionally. This should take 15-20 minutes. Reduce heat to medium-low and remove cover. Continue cooking 3-5 minutes until the carrots start to caramelize.

  • Once caramelization occurs…

  • …add butter and maple syrup. Lightly salt and pepper to taste. Cook 3-5 minutes to thicken the candied glaze slightly. Serve and enjoy!
