This recipe is so good that people order it off the menu.

When I was a cook at a restaurant, we would come up with new recipes that we thought our customers would like. Over forty years ago, this soup took its test run on the menu. It is still being served.

Of course, I have tweaked the recipe a bit to give it a little more flavor…according to my family. As always, make the recipes the way that taste best to you and your family.

Make Your Own Taco Seasoning Mix

While you certainly can use a pre-packaged taco seasoning mix, you can quickly make your own. The nice thing about that is that the amount of each seasoning can be adjusted to your taste buds.

There have been a few times through the years that I ran out of the mix. It is 30 minutes to the store just one way for me. Therefore, it is important to be able to make my own.

Now that I am home more, I prefer making my own Taco Spice Mix. You can too!

Easy, Hearty, and Nutritious Taco Soup

An easy keto taco soup recipe that doesn’t look fancy, yet packs a lot of flavor. Perfect for cozying up to on those chilly rainy and snowy days for the whole family.

This flavorful soup recipe is not like many others for taco soup. Often you will see beef broth, or vegetable broth, black beans, corn, and other hearty ingredients. Our recipe is still hearty, but with a bit more zest and a broth that tastes a bit like a bloody mary drink.

Ingredients

Make this soup with pantry staples. I always have these ingredients on hand especially in the fall as the weather gets chilly. That way, I can whip up this easy soup recipe in minutes. I am happy because my family loves eating this hearty and filling meal.

  • Hamburger
  • Onion
  • Celery
  • Taco Seasoning
  • Salt and pepper
  • Green Beans 
  • V8 Original Vegetable Juice 
  • Tomato Soup 
  • Diced Tomatoes

Recipe Variations

If you prefer not to use hamburger, ground turkey or ground chicken are nice alternatives.

I like to use V8 vegetable juice because of the extra nutrients. However, tomato juice would work nicely.

In place of the diced tomatoes, Rotel tomatoes or fresh diced tomatoes are a great choice.

Prefer more spice? Add a bit of green chilies, a seeded and finely diced jalapeno, or 1/2 teaspoon red pepper flakes.

Sometimes, I have seen taco soup recipes that have a creamy texture. You can achieve that by adding a block of cream cheese. Cook over medium heat, stirring until it is melted.

If you like beans in your soups, kidney beans or pinto beans would work well in this recipe.

Ingredients

  • 3 Pounds Hamburger
  • 1 Medium Onion diced
  • 2 Stalks Celery diced
  • 1 Packet Taco Seasoning
  • Salt to taste about 1/2-1 tsp.
  • Pepper to taste about 1/2-1 tsp.
  • 12 Ounces Green Beans I usually use frozen cut beans
  • 11.5 Ounces V8 Original Vegetable Juice 1 can
  • 10 3/4 Ounces Tomato Soup 1 can
  • 14.5 Ounces Diced Tomatoes 1 can, use Rotel tomatoes if desired

Instructions

  • I brown the meat in the 5 Qt. kettle with the onion and celery. Once the meat is browned, I add the salt, pepper, and taco seasoning.
    3 Pounds Hamburger, 1 Medium Onion, 2 Stalks Celery, 1 Packet Taco Seasoning, Salt, Pepper
  • Since I use the frozen cut green beans, I open the bag at this time and add the entire bag to the kettle. I cook a few minutes.
    12 Ounces Green Beans
  • Add the V8 Vegetable Juice, Tomato Soup, and Diced Tomatoes to the kettle. Fill with water to approximately 1 inch from the top. Bring to a boil stirring occasionally to make sure that nothing is sticking to the bottom of the kettle.
    11.5 Ounces V8 Original Vegetable Juice, 10 3/4 Ounces Tomato Soup, 14.5 Ounces Diced Tomatoes
  • Serve with the desired toppings. I have a list started for you above on what you might want to serve this soup with. However, this soup is great on its own without any toppings. Whichever way you choose to have this soup, enjoy!

When I serve this soup, I often have a variety of extra toppings available for family and friends to dress up the soup anyway that suits them. This is a fun and easy way to enjoy taco night with a crowd.

Another serving idea is to place the toppings in individual containers so your guests can top their own hearty soup. If you are serving this for game day, make a tray of toppings for your guests to keep enjoying the game and rooting for their favorite team while enjoying a hot piping bowl.

Slow Cooker Fall Soup

If you are in a hurry, you can cook this easy recipe on the stovetop in 30 minutes using a large pot.

No time to watch your soup cooking on the stove? No worries.

Make this delicious soup in your crock pot.

Cook the ground beef with the onions and add it to the slow cooker. Add the remaining ingredients and cook until hot. Generally on high 2 to 3 hours or low 3 to 4 hours.

If you are like me, I sometimes sneak a small bowl of this soup before serving anyone else. You know, we are supposed to taste our cooking right?

How Long Should You Keep Leftover Soup?

In general, any kind of soup that is stored in an airtight container in the refrigerator will last 3 to 5 days. This leftover taco soup will last the 5 days when using this recipe.

This is also a perfect soup to make and freeze. A frozen batch can last you up to three months when stored in a freezer-safe container in the freezer. Pro Tip. freeze in single servings, thaw and reheat in the microwave as needed when you need something hearty and warm.
