Instructions
This recipe just takes minutes of prep. Begin by preparing the spinach. If using fresh spinach, coarsely chop and sauté in a skillet and cool before adding it to the other ingredients. If using frozen thaw and dice if not done already. Pro Tip. I like to use the frozen chopped spinach. Remove the excess liquid from the spinach. Squeeze the spinach to remove the water. Another option is to wrap the spinach in paper towels and wring the liquid out.
10 Ounces Spinach Leaves
In a large bowl, add the cream cheese, sour cream, spinach, garlic, salt, pepper, parmesan cheese, and half of the mozzarella cheese in a bowl. Stir until well combined. Transfer the spinach mixture into a prepared baking dish. Note. you can also add some scallions and use dried parsley right in the spinach mixture.
Add the rest of the shredded mozzarella cheese on top
Bake at 375 degrees Fahrenheit for 20 minutes or until the dip is hot and bubbly, and the cheese is melted.
Optional. Broil for 2 to 3 more minutes until the cheese starts to brown.
Top with Freshly diced parsley and or diced scallions for serving.
