Instructions
Begin by preparing the green beans. Gently wash and snip the ends. If placing in a pint size container, but to approximately 4-inch pieces.
Then sterilize the jars, lids, and rings. In a large kettle add water and bring to a strong simmer. Add them to the water and heat in the simmering water until ready to use.
Prepare the brine by combining the white vinegar, water, granulated sugar, and canning salt in a large saucepan and bring to a boil over high heat, stirring to dissolve the salt and sugar.
Remove the jars from the hot water and place 1 clove crushed or sliced garlic and 1 dill sprig into the hot jar. Pack beans cut side up leaving a ½ inch headspace.
Ladle hot brine into a hot jar leaving a ½ inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
Process jars in the water bath 15 minutes. Turn off heat let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal, they should not flex when center is pressed.

I have found that if I pack them in tightly, one quart will hold a pound of beans. A pint size mason jar will hold a half pound.How you pack the canning jar will make a difference in how many beans it will hold. If you tilt the mason jar on its side to pack the beans, it will help keep them straight, which will allow you to pack more beans in the jar. Pack the jar as tight as you can when filling.
