Ingredients

  • 4 Large Chicken Breasts or rotisserie chicken, diced
  • ½ Teaspoon Kosher Salt
  • ½ Teaspoon Black Pepper
  • 10.5 Ounces Cream of Chicken Soup 1 can
  • 10.5 Ounces Milk I fill the soup can and rinse it out
  • ½ Cup Sour Cream
  • 6 Ounces Stuffing Mix 1 Box I used Stove Top Savory Herbs, you can also use chicken stuffing mix
  • 4 Tablespoons Butter melted
  • 1 ½ Cups Chicken Broth warmed or vegetable broth
  • Parsley fresh or dried parsley for garnish (optional)

Instructions

  • Preheat your oven to 350°F. Grease a 9 x 13 inch baking dish or casserole dish with a little butter or cooking spray.
  • Dice chicken breasts or leftover chicken mixture into bite-sized pieces. You can also use chicken thighs if you prefer.
    4 Large Chicken Breasts
  • In a bowl, combine cream of chicken soup, sour cream, milk, salt, and pepper. Stir until smooth.
    ½ Teaspoon Kosher Salt, ½ Teaspoon Black Pepper, 10.5 Ounces Cream of Chicken Soup, 10.5 Ounces Milk, ½ Cup Sour Cream
  • Spread the chicken evenly in your baking dish and pour the creamy sauce over the top.
  • In a microwave safe bowl, warm the chicken broth and butter until the butter is melted.
    4 Tablespoons Butter, 1 ½ Cups Chicken Broth
  • Add the stuffing mix to the chicken broth (mixture until moistened. Spread over the top of the chicken.
    6 Ounces Stuffing Mix
  • Bake uncovered for 45-50 minutes or until the savory stuffing topping is golden brown.
  • Optional garnish. Sprinkle parsley on the top of the casserole for a fresh touch.
