Ingredients
- 1 whole pineapple this fruit cocktail is best if you use fresh pineapple
- 6 whole kiwi
- 1 pint whipping cream
- 2 Tbl. granulated sugar

- Cut the rind off the pineapple and the inner core. Cut the pineapple into bite-sized pieces. Add to a large bowl.1 whole pineapple
- Cut the outer fuzzy skin off the kiwi. Cut the kiwi into bite-sized pieces. Add this to the large bowl.6 whole kiwi
- Gently mix the pineapple and kiwi in the bowl to evenly distribute fruit.
Whipping Cream
- With a hand-held mixer, mix the whipping cream until it starts to form peaks. (takes about 1-2 minutes).1 pint whipping cream
- Once peaks start to form, add the sugar and continue mixing the whipping cream until the contents becomes quite thick. (takes about 1-2 minutes). Hint: Total mixing time for the whipping cream is about 4 1/2 minutes or less.2 Tbl. granulated sugar
Assembly
- Spoon fruit into container about 3/4 full. Add a tablespoon or two of the whipping cream. Add a bit more of the fruit on top of the whipping cream. Serve and enjoy.
