1Small Head Green CabbageCoarsely Chopped
1Medium Vidalia OnionChopped - can be any onion
8TablespoonsButter
Salt to taste
Pepper to taste
10OuncesCondensed Cream of chicken or Cream of Mushroom Soup 1-can
1/3cupMayonnaise
3TablespoonsButter Melted
1CupCheddar Cheese Shredded, can be another type of cheese if you wish
1Sleeve Ritz Crackers about 30 crackers coarsely crushed

Instructions
Preheat oven to 350 degrees Fahrenheit. Lightly grease a 2-quart casserole dish.
Melt the butter in a large non-stick pan. While the butter is melting, coarsely chop the cabbage and onion. Add to the melted butter and cook 8-10 minutes covered, stirring occasionally. Season with salt and pepper.
While the cabbage mixture is cooking, in a small bowl, stir together the soup and mayonnaise.
In another bowl, mix the melted butter, shredded cheese, and cracker crumbs.
Transfer the cabbage mixture to a prepared baking dish.
Top with the soup mixture. Then sprinkle on the cheese and cracker crumb mixture.
Bake uncovered for 30 minutes or until topping is turning a golden brown.

Can You Freeze Cabbage Casserole?
Yes, you can. Cooked cabbage freezes well. Just add the ingredients to a freezer-safe container. Label and freeze for 3-4 months. To heat, just bring to room temperature. I have let the casserole thaw in the refrigerator overnight with great results. Bake for 30 minutes at 350 degrees Fahrenheit.
Make Ahead Cabbage Casserole
This is a wonderful casserole to make ahead and freeze or refrigerate and use within a few days. Just complete all the steps of the recipe through adding the cracker topping. From here, you can freeze or refrigerate and bake later. This will last in the refrigerator a few days. To bake, bring to room temperature and bake for 30 minutes at 350 degrees Fahrenheit.
