1 CupWalnutsChopped coarsley
1HeadNapa CabbageClean, Dried, and Cut to Bite-sized pieces
2CupsShredded Cabbage the kind you purchase in a bag
1BunchGreen OnionsSliced Thin
Oriental Salad Dressing
1/2Cup Light Flavored Olive OilOr some other light oil you like
1/4CupWhite Vinegar
1/2CupWhite Sugar
2 1/2 Tbl.Low-Sodium Soy Sauce
3/4CupDried Cranberries

Instructions
Cabbage Salad
Cut the Napa cabbage, slice the green onions, and combine this with the bagged cabbage in a large mixing bowl. Add half of the dried cranberries and walnuts (you can also toast these first before adding or buy them already toasted). Add half of the Ramen noodles.
A few minutes before serving this cabbage salad, pour the salad dressing over the greens. Mix. Add the remaining Ramen Noodles, cranberries, and walnuts on the top.
Ramen Noodle Topping
Melt the butter in a large skillet over medium heat. While the butter is melting, crush the Ramen noodles while they are still in their packages. Once crushed and the butter is melted, pour the contents into the butter in the skillet. Remove the seasoning packets. You will not need those for this recipe.
Saute for a few minutes While stirring frequently, until the Ramen noodles are turning golden. Remove from the heat and let cool.
Oriental Salad Dressing
To make the dressing: combine the sugar, oil,
vinegar, and soy sauce in a bowl.
Whisk for a minute or so.
Whisk until the sugars are dissolved.
Refrigerate any left over salad dressing.Enjoy

This salad is best when the salad dressing is added 5-15 minutes before you plan to eat. That will assure a flavorful and crispy salad.Be creative with the ingredients.The traditional Ramen Noodle Salad would just be the cabbage, green onions, slivered almonds and sesame seeds with this delicious salad dressing. However, I have added a variety of salad options to this and it turns out great every time. This would also be delicious with cooked chicken as a cabbage chicken salad.
