32Oz.Sliced Carrots2 small bags or you can slice your own too
1/2CupMaple Syrupcan also use same amount of brown sugar if desired
Add olive oil to a non-stick pan and add two bags of sliced carrots. Cover and cook on medium-high until fork tender. Stir occasionally. This should take 15-20 minutes.
Reduce heat to medium-low and remove cover. Continue cooking 3-5 minutes until the carrots start to caramelize.
Once caramelization occurs...
...add butter and maple syrup. Lightly salt and pepper to taste. Cook 3-5 minutes to thicken the candied glaze slightly.
