2CupsCucumbers Diced
1MediumTomato Diced--remove the seeds if desired -- or use 1 cup of cherry tomatoes sliced in half
1/2CupOnionRed or Sweet Vadilia Diced
2TBLFresh ParsleyMinced
1/4CupFresh CilantroMinced
1Jalapeno PepperRemove the seeds and dice finely---optional
1CloveGarlicMinced -- if using the garlic preminced from a jar use 1 Tbl.
Salsa Dressing
1/4CupSour Cream
1 1/2TspLemon Juice
1 1/2Tsp.Lime Juice
1/4Tsp.Ground Cumin
1/4Tsp.Lawry's Seasoned Salt

Instructions
In a medium sized mixing bowl, combine the cucumber, tomato, onion, parsley, jalapeno, cilantro and garlic.
In another bowl combine the salsa dressing ingredients - sour cream, lemon and lime juices, ground cumin, and Lawry's Seasoned Salt. Mix together and pour over the salsa ingredients.
We served these with tortilla chips; however, this could be eaten by itself as a salad on a lettuce leaf. Or served on crackers as an appetizer.
