What’s the best way to prepare rhubarb?
Pull the stalk from the plant as this will help the plant grow more stalks. Trim off the leaves and discard them. They are not safe to eat!

Pro Tip. If the stalk is on the larger side, it could have a tough outer layer. You can peel off the outer layer before dicing. This will allow the stalk to cook up tender in your recipes.

Can you freeze rhubarb?
Yes, I do it all the time. When rhubarb is in season, it can be hard to use it all up while it is still fresh. Freezing it is a great way to enjoy it year-round. To freeze, just dice the stalks into pieces. Lay them on a parchment-lined baking pan in a single layer. Place the pan in the freezer and freeze until it is firm. This will take a few hours. Then remove it from the pan and place in a freezer safe container.
If you don’t mind the rhubarb sticking together, then you could add the diced pieces to a freezer container and just freeze. I have had mine last up to one year.
