Roasted Frozen Vegetables

Often, I arrive home from work at 6:30-7:00 pm. The family is hungry and I am tired. As moms, we want to serve our family homemade meals that are healthy and taste good too. This is one of those go-to side dishes that satisfy everyone. If there exists an easier weeknight side than roasted vegetables made using frozen vegetables, I’d love to hear about it. If I have the fresh vegetables, I will use that too. However, that is even more work as it has to be washed , dried, and chopped. If I start from frozen, I need to cut open the bag and I am ready to start my recipe.

Cheese is optional. So is the types of cheese that you use. Change up the type of cheese combinations that you use to bring out different flavors of the vegetables. The cheese is optional. Oven roasted veggies are delicious on their own. However, we live in Wisconsin – need I say more about cheese?

Try various types of vegetable combinations – find your favorite. This recipe is made from the California Blend. Broccoli and cauliflower are always a hit. Then there is the Italian Blend Vegetables another vegetable variation that includes snap peas and peppers too.

Ingredients

  • 32 Oz. California Blend Vegetables Frozen or (fresh broccoli, sliced carrots, cauliflower)
  • 1/4 Cup Olive Oil
  • 1 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 2 Cups Cheddar Cheese Shredded
  • 1 Cup Parmesan Cheese Fresh and Shredded or even the kind from the jar -use what you have on hand.

Instructions

  • Line a 9 X 13 cake pan with foil and spray with cooking spray. This helps the cheese not stick. Preheat oven to 400 degrees Fahrenheit.
  • Add the frozen vegetables, oil, salt, and pepper. Mix to incorporate the oil, salt, and pepper with the vegetables. Cook uncovered for 40 minutes.
  • Sprinkle the cheddar cheese and Parmesan cheese over the top of the vegetables and cook for another 15 minutes or until the cheese is melted and bubbly.
  • Remove and enjoy with your meal.
