Flavor Just Like Regular Mashed Potatoes

The lovely thing about this recipe is that the cauliflower just adds a creamy and delicious flavor to the side dish. Once you add the vegetable, continue preparing the potatoes your favorite way. Think about adding cream cheese, garlic, chives, onions, cheese, and more.

Now take a look at the photos. If I did not tell you that there was cauliflower in this side dish, could you tell? The nice thing about this is that my family can’t either. In fact, my son-in-law asked to take the leftovers to work the next day.

Someone that has to watch their carb intake would benefit from finding ways to sneak more vegetables into their diet.

This is a delicious way. I think this could be a holiday side dish, not just a weekday meal or Sunday dinner.

Cauliflower Considerations

Today, I used a bag of frozen cauliflower, which worked just fine. It was easy and quick. All I had to do was dump the bag into a microwave safe bowl, add a bit of water and microwave until cooked through.

You can certainly use fresh cauliflower. Just clean and cut into smaller pieces before microwaving.

Once the cauliflower is cooked, make sure to get drain in a colander to remove the excess water before adding to the cooked potatoes. If you do not do this step, the mixture will be watery.

Can you mix this by hand?

Absolutely, that is how I generally make my mashed potatoes. You can transfer the ingredients to a food processor and mix until smooth; however know that sometimes, the mixture can be a bit pasty. Some folks like to use a hand-held mixer, that is how my sister-in-law likes her potatoes mashed, as they turn out very whipped. I generally use a hand-held potato masher. Does the trick just fine for me.

Can you make this side dish ahead of time?

You sure can. Just like regular mashed potatoes, these can be made ahead and reheated. I reheat them in the microwave often. However, if you have your oven on; are making something else, and have room, just reheat in the oven.

Can I make this with just the cauliflower?

Yes, however, you will need to make sure that it is thoroughly cooked. Drain the water and press the water out using a towel. This is very important, as it will be too watery if you miss this step.

Ingredients

  • 8 Medium Potatoes I prefer Yukon Gold, but any you like would work
  • 8 Oz. Cauliflower or 1 head cleaned and cut into small pieces
  • 4 Tbl. Butter
  • 1 Cup Heavy Cream
  • 1 Tsp. Salt or to taste
  • 3/4 Tsp, Pepper or to taste
  • Water for cooking the potatoes and cauliflower

Instructions

  • Cut the cauliflower heads down into florets, then microwave, steam or boil for about 8-10 minutes, until cooked completely. Fork tender and soft. Drain. You can use fresh or frozen.
  • While that is cooking, peel and quarter the potatoes. Boil for 15-20 minutes, until cooked completely. Fork tender and soft. Drain.
  • Once the potatoes and cauliflower are both cooked and still hot, put in container large enough to hold both and allow you to mix.

  • Add the butter, cream, salt and pepper.

  • Use a hand masher, mixer, or food processor to mash.

  • Top with more butter or gravy or another topping of your choosing. Serve.
