Hearty Soup in Under and Hour

It took less than an hour to make this scrumptious soup. However, I used juices from my Holiday ham that was made in the slow cooker. This particular stock is an amazing flavor when combined with the Smokey beef roast.

We are lucky enough to live just 20 minutes away from a local meat market that smokes their own meats and ships them all over the world. A few months ago, I had purchased a five pound package of this smoked beef. I have already made two other recipes with this meat and this soup is the final recipe and the package is all used up. If you are looking for a crowd-pleasing recipe, this soup is loved by everyone that has tried it.

Building Flavors Effortlessly

The first flavor is built when the beef is smoked at the local meat market. It is already sliced thin so it just falls apart when cutting it into bite-sized pieces.

Second, when I make my Holiday ham, I save the juices! I prefer to get a spiral ham because it is easier to slice at the end and serve. Then I add brown sugar and pineapple. Yum! I use some of the juice to make a gravy for over the ham and potatoes. The rest I freeze in 2-4 cup sealed containers.

This ham juice adds a rich and a bit of a sweet flavor. Partner this with the smoked beef and you have a winning combination.

Green beans adds such a fresh flavor with a bit of a crunch. The corn is sweet when biting into it, but then, so does the leftover bits of pineapple from the ham juice! Yum.

Once the soup comes to a boil, the heat is turned off and the heavy cream is added along with the fresh parsley. Such a creamy finish to this soup.

A Soup that is Almost a Chowder

All of the goodness in the soup with the cream bring this into the realm of chowder. Just amazing flavor that just takes minutes. The only reason that I am not calling this a chowder is that normally a chowder would be a bit thicker.

Hearty Smoked Beef Soup Ingredients

Smoked Beef. Smoking meat adds flavor and it keeps the meat nice and tender. Further, it aids in preserving meat for the long haul. This beef has a slightly smoky flavor, tastes a bit like bacon, but has that rich beef flavor. Additionally, the thin sliced beef is very tender.

The smoked beef that I am lucky to get is also sliced thin. which makes it perfect for pasta, sandwiches, salads, or just about anything we can think to add it.

Smoked Beef Substitution in this Recipe

If you do not have access to smoked beef, try thinly sliced beef lunch meat and a few pieces of bacon to give you that smoked beef flavor. Corned beef at the deli or in the lunch meat area that has been sliced thin would also work good with this recipe.

Seasoned Ham Juice Substitution

Seasoned Ham Juice. While I used ham juice that was from my Holiday ham, you can achieve the same result using this quick substitute. (ham bouillon – enough for 4 cups of water, a small can of pineapple juice (6 oz.), 1/2 cup of brown sugar).

Beans. I added just one can of Great Northern beans; however, if you had butter beans or blackeye peas, they would be creamy and delicious in this soup as well. They pack protein and fill you up.

Vegetables. Today, I used frozen corn and green beans. However, this is a perfect recipe for a wide variety of options such as; sweet potato, potatoes, squash, cabbage, spinach, or even carrots. Be creative and if you are lucky enough to have a garden, use what is in season.

Pasta. This is a perfect hearty soup for pastas such as Gemelli, elbow macaroni, Barilla, Penne, Fusilli or any other pasta that is a bit more sturdy when cooked.

All the other Secret Ingredients you most likely have in your pantry to send this soup over the top in terms of flavor. Onion, garlic, tomato paste, soy sauce, maple syrup, heavy cream, and fresh parsley.

Topping Ideas for Soup

Enjoy this soup on its own or add a bit of shredded Parmesan, Asiago, Romano, or Grana Padano cheese on top just before serving. It compliments the flavors well. Let’s face it, in Wisconsin everything is better with cheese!

Make this Hearty Smoked Beef Soup in a Slow Cooker

Add everything except for the heavy cream and fresh parsley. Cook on high 1-2 hours or low 3-4 hours until the soup is heated through. About a half hour before serving, add the cream and parsley. Since the beef is already cooked through the smoking process, it only has to get heated with the rest of the ingredients.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 Medium Onion Diced
  • 1/2 Cup Celery Diced
  • 2 Tablespoons Garlic Minced
  • 16 Ounces Green Beans Frozen (1 small bag)
  • 14.4 Ounces Corn Frozen (1 small bag)
  • 15.5 Ounces Great Northern Beans 1 can
  • 6 Ounces Tomato Paste 1 small can
  • 8 Cups Ham Juice with a bit of pineapple and brown sugar – see above for specifics for the ham juices.
  • 4 Cups Water
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Maple Syrup
  • 4 Cups Smoked Beef Sliced thin and diced to bite-size pieces
  • 1 Cup Gemelli Pasta Uncooked
  • 1/2 Cup Fresh Parsley Chopped
  • 1 Cup Heavy Cream
  • Shredded Cheese top with shredded cheese optional

Instructions

  • In a large soup kettle add the olive oil, onion, garlic, and celery. Cook a few minutes until this starts to caramelize.
  • Add the green beans, corn, Great Northern Beans, tomato paste, ham juice, water, maple syrup, and soy sauce. (note if you did not have ham juice with pineapple and brown sugar, add 1 small can of pineapple juice, 1/2 cup of brown sugar, and 1 ham bouillon).

  • Add the smoked beef.
  • Add the uncooked pasta. Bring to a boil and turn off the heat.
  • Add the cream and fresh parsley. Stir to incorporate. Let sit covered a few minutes until the pasta is cooked through from the hot soup.

  • Serve. Add additional toppings when serving if desired.
