This Pico de Gallo is full of fresh tomatoes, onions, jalapenos, cilantro, and lime juice. Simple ingredients combined to make this delicious Salsa Fresca.

Generally, this Pico is made with equal parts of tomato, onion, fresh cilantro, and a generous squeeze of fresh lime juice. This is a fresh, delicious mild Pico. However, jalapeno can be added like I did today for a bit of a spicy salsa.

Easy No Cook Recipe

This recipe does not require any cooking. The hardest part to making this fresh salsa is dicing the ingredients.

Use a Non-Reactive Bowl

It is particularly important to use a non-reactive bowl when making this recipe.

Why does this recipe require a non-reactive bowl?

If you are using ingredients like tomatoes or lemon juice, your food can take on a metallic flavor. Additionally, light colored foods, like eggs, can develop gray streaks.

Reactive Bowls: Aluminum, copper, iron, and steel (not ‘stainless’) are all reactive. Therefore, Do Not use these types of bowls.

Non-Reactive Bowls: Stainless steel, glass, or glazed ceramic are all non-reactive.

Just to be safe: Use non-reactive cookware whenever your recipe contains acidic or alkaline ingredients. However, there is really no single metal that is perfect for all foods and recipes. According to Martha Stewart, it is a good idea to buy different pieces to suit different needs (cast iron for skillets, copper for sauté pans, etc.)

Recipe Tips for a Better Pico de Gallo

If you are adding the jalapeno to this recipe, use gloves when slicing and removing the seeds.

Boost the flavor by letting this recipe sit for a day before serving. This will give the ingredients and flavors time to meld, which increases the flavor profile.  

Serving Suggestions

This Pico de Gallo can be served as a fresh salsa, or a topping for so many different foods. A few ideas are tacos, eggs, pork carnitas, burritos, or even on top of guacamole dip. So delicious and fresh.

Alternative to Cilantro

While our family loves cilantro, not everyone does. Did you know that some people have a genetic factor for not liking cilantro? For those cilantro-haters for whom the plant tastes like soap, the issue is genetic. Who knew? Therefore, to those folks that are not fond of cilantro, you can substitute parsley or basil in this recipe.

Ingredients

  • 1 Lb. Tomatoes Diced (generally 3-4 medium)
  • 1 Cup Onion Diced
  • 1/2 Cup Cilantro Diced (can substitute parsley or basil of you don't like cilantro)
  • 2 Tbl. Lime Juice Best if fresh squeezed
  • 1/2 Tsp. Salt
  • 1/8 Tsp. Pepper
  • 1 Jalapeno Pepper Seeded and Diced (optional)

Instructions

  • In a medium, non-reactive bowl add the diced tomato, onion, cilantro, jalapeno, salt, and pepper.

  • Juice the lime. Stir in the lime juice.
  • Let the fresh salsa rest 1 day if possible. The flavors will be better.
