I always have a box of cake mix on hand in my pantry. It is one of those things that can be a lifesaver when you need to pull something together to take to a party or serve unexpected guests.

However, sometimes, it is just wonderful to have a simple and uncomplicated recipe to make that you know your whole family loves. This is one of those recipes.

These chocolate cake mix crinkle cookies make wonderful classic Christmas cookies, yet they are perfect for any occasion.

When children first start out baking, it is wonderful to have easy recipes that they can make, and you know will be a success every time. This is one of those recipes that requires little measuring. Learning how to roll the cookie balls into the powdered sugar will help build skills. This is a great way to help them develop confidence in the kitchen.

The basic recipe for the Chocolate Crinkle Cake Mix Cookies recipe consists of just 5 simple ingredients. Cake mix, eggs, oil, vanilla, and powdered sugar for rolling the cookies before baking.

However, you can add chocolate chips to the recipe for a delicious surprise in every bite. Today, I added ½ cup of chocolate chips and ½ cup of vanilla chips to the mix. Very fun and yummy!

The ingredients mix easily; therefore, just mix by hand in a large mixing bowl.

While you can use a teaspoon to make the cookie balls, I find it much easier to use a 1-inch cookie scoop or a medium cookie scoop. The size of the cookies is sure to be uniform, your hands stay clean too.

Refrigerate the dough for 20 minutes. Chilled dough is easier to work with when you roll it in the powdered sugar.

When rolling the dough in the powdered sugar, I use a spoon to roll each ball in the confectioners’ sugar. Try and make sure that they are fully coated. This will help the finished cookies have a well-defined crinkle finish. In just minutes all the cookies are formed and ready for baking.

Place the dough balls on a cookie sheet about 2-inches apart. This way, there is enough space, as they will spread a little as they bake. I generally place 3 across and 5 down the cookie sheet. 15 sugar-coated dough balls on two cookie sheets and they are ready to bake.

Do not overbake these cookies. If you like a chewy cookie, eight to ten minutes is all that is needed. Once removed from the oven, place on a cooling rack. Try and cool completely before devouring these delicious treats.

  • Just mix by hand until well incorporated. Just a minute or two. Chill dough for 20 minutes for easier handling. However, if you are short on time, you can make the cookie dough balls with a cookie scoop without chilling. The dough will be a bit soft to work with.

  • Roll the cookie dough in the powdered sugar.

  • Place on cookie sheet approximately 2-inches apart. I used a non-stick liner, you can use parchment paper too. Makes for easy clean-up with no sticking.

  • Remove from pans after a minute or so and cool on wire racks.
