This easy pork chile verde is made in the slow cooker. This dish is not complicated, and the slow cooker is a perfect way to develop the flavor of the sauce while rendering the pork tender. Amazing for the first meal and even better for left over meals.

Slow Cooker and Jarred Salsa Verde
While you can use fresh peppers and tomatillos, it is just as delicious using Jarred Salsa Verde. To be honest, I live 30 minutes from the closest grocery store and unless I plan ahead, I may not have all the fresh ingredients needed in my pantry. However, I usually have a jar of Salsa Verde.
No Fresh Cilantro in the house? No worries
If I do not have fresh cilantro, sometimes, I use little bundles that I have frozen. When I purchase the fresh cilantro, we do not always use it up fast enough. Therefore, I make little bundles and freeze them in a freezer container. These little gems are perfect for this dish. Just chop it up and add.
Pair a 3-4 pound pork butt roast with salsa verde, jalapeno, and cilantro. After cooking on low for 8 hours, your taste buds will thank you.
Remove the Pork Roast from the slow cooker to shred with a fork. Return to the delicious sauce to continue to soak up all the deep, rich flavors.
What is Chile Verdie?
According to Norecipes.com , we call it Chile Verde (Green Chili) north of the border, the dish is known as Carne De Puerco En Salsa Verde (pork in green sauce) in Mexico.
Additionally, they mention that Chile Verde is a Mexican-American stew with melt-in-your-mouth tender chunks of pork. The slow cooking process paired with the spices creates a savory green sauce that pairs nicely with the tender pork.
Making a New Meal From Left Over Pork
This will serve 8-10 people; however, at our house, there are only 4 people to eat this meal in one seating. Therefore, it is important to use left over food and make delicious new meals from it.
We love having these left overs because I make my Pork Carnitas with the meat. It is just amazing!

Tender pieces of pork simmered in a flavorful tomatillo and chile broth. Serve in a bowl and enjoy with corn chips or with a side of rice for an authentic Mexican meal!

Ingredients
- 4 lbs Pork shoulder or butt roast Can be 3-5 pounds
- 16 Oz. Salsa Verde 1 Jar
- 1 small Jalapeno Finely chopped, seeds and all
- Salt
- Pepper

Instructions
- Season the pork with salt and pepper. Brown on all sides on the stove top. This will take about 15 minutes.
- Transfer browned roast to a slow cooker. Pour Salsa Verde over the pork and add the jalapeno on top.
- Cook on low for 8 hours.
- Remove pork to a cake pan. I found this is the best way to shred the pork without loosing the juices all over your counter. Once the pork is shredded, add back into the juice in the slow cooker.
- Serve with a side of rice or in a bowl.
