Ingredients
- 2 pounds carrots
- 2 Tbl. olive oil
- 1/2 tsp. salt to taste

Instructions
- Preheat the oven to 400 degrees. While the oven is preheating, peel the carrots and trim off the ends. Cut the carrots into 2-3 inch pieces for uniform cooking.
- Place the carrots in a large mixing bowl and drizzle the olive oil on top. Sprinkle the salt on and mix to incorporate the salt and olive oil on the carrots.
- Line a cookie sheet with tin foil (easy clean up). Add the carrots and place in the oven. Bake at 400 degrees for approximately 40 minutes. (cook them to the way you like to eat them). Some people like them cooked more than I do and some people like them less cooked.
