Cabbage is a fan favorite in our house. In just about every kitchen around, you can find a recipe for some type of cabbage casserole.

We love this as a side dish with just about anything. Sometimes, we enjoy this as a simple meal all on its own.

How Do You Make Cabbage Casserole?

This takes one small head of cabbage. Coarsely chop the cabbage and remove the center core, which will be tough if left in. I would say in about 1-inch pieces and there is no need to separate the leaves. This cabbage will shrink and become soft with the cooking process. Note, today I used green; however, I have made this with red cabbage too simply fine.

While this is a baked casserole, I save time in the oven by partially cooking the cabbage with the sliced sweet on before it goes into the casserole pan.

While the cabbage and onions are cooking, mix the soup and mayonnaise together.

Once the cabbage is done, transfer to a casserole dish and spread the soup mixture over the top.

In a bowl, mix melted butter, shredded cheddar, and a crushed tube of Ritz crackers. Sprinkle this mixture on top.

Bake until golden and buttery.

Can You Freeze Cabbage Casserole?

Yes, you can. Cooked cabbage freezes well. Just add the ingredients to a freezer-safe container. Label and freeze for 3-4 months.

To heat, just bring to room temperature. I have let the casserole thaw in the refrigerator overnight with great results. Bake for 30 minutes at 350 degrees Fahrenheit.

Make Ahead Cabbage Casserole

This is a wonderful casserole to make ahead and freeze or refrigerate and use within a few days. Just complete all the steps of the recipe through adding the cracker topping. From here, you can freeze or refrigerate and bake later. This will last in the refrigerator a few days. To bake, bring to room temperature and bake for 30 minutes at 350 degrees Fahrenheit.

How to Freeze Cabbage

Did you know that cabbage freezes well? If you have a lot of cabbage and worry that it will go bad on you. Freezing is an option.

Slice the cabbage in wedges and place a few into a freezer bag to freeze in bulk. Use the frozen cabbage within 1 year for best freshness.

Ingredients

  • 1 Small Head Green Cabbage Coarsely Chopped
  • 1 Medium Vidalia Onion Chopped – can be any onion
  • 8 Tablespoons Butter
  • Salt to taste
  • Pepper to taste
  • 10 Ounces Condensed Cream of chicken or Cream of Mushroom Soup 1-can
  • 1/3 cup Mayonnaise
  • 3 Tablespoons Butter Melted
  • 1 Cup Cheddar Cheese Shredded, can be another type of cheese if you wish
  • 1 Sleeve Ritz Crackers about 30 crackers coarsely crushed

Instructions

  • Preheat oven to 350 degrees Fahrenheit. Lightly grease a 2-quart casserole dish.
  • Melt the butter in a large non-stick pan. While the butter is melting, coarsely chop the cabbage and onion. Add to the melted butter and cook 8-10 minutes covered, stirring occasionally. Season with salt and pepper.
  • While the cabbage mixture is cooking, in a small bowl, stir together the soup and mayonnaise.
  • In another bowl, mix the melted butter, shredded cheese, and cracker crumbs.
  • Transfer the cabbage mixture to a prepared baking dish.

  • Top with the soup mixture. Then sprinkle on the cheese and cracker crumb mixture.
