This peach salsa is an easy and delicious snack that can be made in minutes. In the summer when the peaches are plentiful, we made this appetizer. It is a delicious combination of fruit and vegetables with a sweet and tangy salad dressing to help blend all the flavors together.

Once I had this recipe figured out, it has become one of the most requested food for a party.
If you are entertaining at all this summer, this is the perfect addition to an easy summer party menu. Whenever I make this salsa and bring it to a party, it is one of those recipes that just bring a smile to everyone’s face. Family and friends just can’t seem to get enough.
Choosing Fresh Peaches
The two peaches that were on my counter waiting to be eaten were still fresh and just the perfect amount of ripe. For this recipe, you will want to choose peaches that are ripe but on the firm side yet. If the peaches are too soft, they can get mushy in the salsa.
Therefore, choose peaches that smell good and have slight if any give when you gently squeeze them. Both yellow and white peaches will work well for this salsa recipe.
Preparing Peaches for This Salsa
The peaches I used today had a smooth skin; therefore, I left the skin on and proceeded to dice them for the recipe. However, if I had purchased peaches that had the fuzzy skin, I would have peeled them first.
Here is how to peel the skin off the peaches that are still firm for this recipe. The peeler is great for when the peach is firm but still ripe. The skin should easily pull away from the flesh. A paring knife will also help remove the skin from any stubborn areas.
Making Peach Salsa
This recipe is easy, just dice the ingredients, make the salad dressing, pour it on top, give it a stir and enjoy.
I used the ingredients I had on hand today as I spied two peaches on the kitchen counter that needed to be eaten. They were the inspiration for this beautiful recipe.
After poking around in the pantry and refrigerator a few minutes, I came up with enough items to pair with the peaches to make a great-tasting salsa.

- Black Beans
- Tomatoes
- Peaches
- Sweet Cherry Peppers
The salad dressing is made from things that were already on hand in my pantry as well.
- Sweet Cherry Pepper brine
- Salt
- Pepper
- Sugar
- Rice Vinegar
- Olive Oil
- Lime Juice

This simple recipe has so many uses. Let me share a few ways with you.
- It is a perfect appetizer with chips.
- Add as an accompaniment to fish, grilled chicken, or even a hamburger.
- Serve this on top of a lettuce salad.

Tips for Peach Salsa
Try and dice the ingredients into a fine dice
Add other fruits to this salsa such as pineapple, apple, strawberries, kiwi, or mango
Delicious Summer Appetizer
If you prefer more heat, go ahead, and add some with peppers, chili flakes, or a bit of hot sauce.
Spoon over tacos, quesadillas, and pork carnitas for a delicious finish.

Ingredients
- 1 Cucumber peeled and diced
- 1 Small Red Onion peeled and diced
- 15 Ounces Black Beans rinsed and drained (1 can)
- 2 Cups Tomatoes diced
- 2 Peaches diced
- 16 Ounces Sweet Cherry Peppers diced (reserve the juice for the salsa salad dressing)
Salsa Salad Dressing
- ½ Cup Sweet Cherry Pepper brine
- 1 Teaspoon Salt
- ½ Teaspoon Pepper
- 3 Tablespoons Sugar
- ½ Cup Rice Vinegar
- ½ Cup Olive Oil
- 1/2 cup lime juice 3 limes juiced

Instructions
- In a large mixing bowl add the diced cucumber, red onion, tomatoes, peaches, and sweet cherry peppers. Drain and rinse the black beans and add those.
- In another bowl mix the salad dressing ingredients sweet cherry pepper juice, salt, pepper, sugar, rice vinegar, and olive oil. Add this to the salsa ingredients and gently combine the ingredients.
