It takes just three ingredients to make this caramel sauce, butter, brown sugar, and a bit of milk. Add this to a pan, heat and bring to a boil a few minutes. the end result is a scrumptious sauce that will compliment just about anything.
Today, I poured – yup – poured this over the banana bread. However, you can put this in a jar and spoon over ice cream too. Put in a milk shake. Drizzle over your favorite coffee that is topped with whipping cream.

The caramel is so good, that you will not want to waste a drop. Tastes great with the banana bread. I normally put a dusting of sugar on top of my banana bread, or a crumb topping. However, this time, I thought I would try a caramel sauce topping. So glad that I tried this one.

Freezing Bananas
My husband does not eat bananas. When I purchase bananas, very often, I can’t eat the bananas before they start to get brown spots. When I have bananas that are on the verge, I peel them and put them in a Plastic Bag and pop them in the freezer.
I can’t stand to throw away food. When I make banana bread, it is always when I have 2-3 bananas in the freezer waiting to be used. By the way, my husband normally does not eat the banana bread – I asked him if he wanted some of this bread-he said yes. I couldn’t believe it. He is my worst critic sometimes! He loved it!
How to Use Frozen Bananas in Cooking
Put the frozen bananas in a microwave-safe bowl. Microwave them for about 3 minutes on power level 30. Once thawed, I used the hand mixer to mash the bananas. Works like a charm. They are now ready to be used in this delicious banana bread recipe.
Two Loaves of Banana Bread
This recipe makes two loaves of banana bread. However, if you like to give gifts or freeze smaller loaves for later, make this in the smaller bread pans. If you do freeze this, make sure to wrap in a few layers of plastic wrap or place in a freezer plastic bag or air tight container so it stays fresh in the freezer for up to 3 months.
Do not top with the caramel sauce until you are ready to eat. To enjoy, just thaw and add the caramel sauce if desired.

I like to serve this as a dessert sometimes. Just place the banana loaf on a pretty platter and pour on the caramel. No one in my family can resist this.
The banana flavor comes through and this bread is almost a cake as it is moist, sweet, and cake-like!
Banana Bread Variations
This bread can be made with or without nuts. If you are a walnut or pecan lover like I am, add 1 cup chopped to the recipe. Love the crunchy texture and flavor they add.
Sometimes, I just make this bread and do not make the sauce. It is delicious all on its own. However, I will spread on a bit of butter.

Ingredients
- 1/2 Cup butter Softened
- 1 1/2 Cups sugar
- 2 Large eggs
- 3 Bananas mashed
- 8 Ounces Sour Cream if you don’t have it, use whole milk
- 2 Tsp. vanilla
- 3/4 Tsp. cinnamon
- 1/8 Tsp. Nutmeg
- 1 1/2 Tsp. baking soda
- 2 1/4 Cups all-purpose flour
Caramel
- 3/4 Cup butter
- 1 Cup brown sugar
- 6 TBL. milk

Instructions
Banana Bread
- Preheat oven to 325 degrees F. Grease two 7X3 inch loaf pans.
- In a large bowl, cream butter, sugar, and eggs.
- Add mashed bananas, sour cream, vanilla, nutmeg, and cinnamon
- Mix flour and baking soda-then add to the banana mixture.
- Divide into prepared pans.
- Bake 1 hour and 10 minutes on 325 degrees F.
Caramel
- Add butter, brown sugar, and milk in sauce pan. Continuously stirring, heat over medium-high heat until rolling boil. A rolling boil is when the boiling action continues even when you are stirring.
- To help you visualize what a rolling boil is…This picture is of the caramel mixture just starting to boil.
- This picture is of the caramel mixture at a rolling boil. When the mixture gets to this point, boil for 2 minutes. After 2 minutes, take off heat and let caramel cool for 30 minutes to 1 hour.
Finishing Touch
- Once both the banana bread and caramel mixture are cool. Divide the caramel mixture between the two loaves of bread and spoon the caramel over the top of the loaves. enjoy!
