What I love about this recipe is, it is really versatile. Crispy bacon a delicious twist to it. You can also add some sauteed mushrooms. Spinach in case you want to add some fiber to it.

  • 2 Large Chicken Breasts Boneless and Skinless
  • 3 Tablespoons Olive Oil
  • 1 Teaspoon Seasoned Salt
  • ½ Teaspoon Black Pepper

  • 1 Cup Milk Whole Milk preferred, but can be any milk
  • 1 Cup Ranch Dressing
  • 2 Cups Spinach Fresh spinach leaves

Instructions

  • Preparing the Chicken:
  • Slice the chicken breasts lengthwise in half so they are approximately ½ inch thick. Then cut into 1-inch size pieces.
  • In a large skillet, heat olive oil over medium heat.
  • Place the chicken breast pieces in the skillet and season with the seasoned salt and pepper.
  • Cook for about 4-5 minutes per side turning the pieces throughout the cooking. Once they are almost cooked through with a golden sear add the fresh spinach.
  • Let this chicken and spinach mixture continue cooking another minute.
  • Creating the Creamy Ranch Sauce:
  • Reduce the heat to low and add the milk and ranch dressing to the skillet.
  • Stir the mixture well, scraping the bottom of the skillet to incorporate any flavorful bits left from cooking the chicken.
