The thought of making truffles always intimidated me because it seemed complicated to make perfect little balls without any messiness or waste. Until now!

First, get your hands on some high-quality chocolate. You can use any type of chocolate but the higher the cocoa content, the better! If you’re looking for a more intense flavor and deeper color, try using dark or bittersweet chocolate.

Whatever you do, make sure it’s good quality because this is what will give your truffles that delicious taste! Next up: mix all of your ingredients together in a bowl until they are well combined then roll into balls. The last step is to roll them in nuts, powdered cocoa, or dip them in a coating of melted chocolate.

They are also great to make and give as gits.

Easy Recipe Requested Often

This recipe is a family favorite that is requested often. I ended up incorporating this recipe into my Holiday baking about ten years ago. Who knew that they would be so good and it would become an annual event.

Multiple batches of this are made and I am lucky if I am not making more before the holiday season is over. However, it feels wonderful when people love what you make for them.

I had chocolate left over from making the English Toffee for years. Normally, I would just take the chocolate, mix it with raisins and peanuts and drop it by spoonful onto waxed paper. Another great recipe that my husband hoards.

About ten years ago, I decided to made these truffles. Well, now they are one of the most requested chocolate treats throughout the Holidays.

However, you do not have to wait until the holidays to make this easy recipe. Add these to your entertaining menu anytime that you are having a special occasion.

Ingredients in Homemade Truffles

Chocolate. I like to use Ambrosia milk chocolate. Other chocolate options, semi-sweet chocolate chips, or chocolate bars. Any flavoring would work.

Heavy Whipping Cream. The kind you find in the dairy case. You can warm the cream a bit to make it mix into the chocolate better. However, if I have mine at room temperature, I find it mixes in just fine without bringing down the temperature of the chocolate too fast.

Vanilla. Make sure it is a good quality vanilla as you will be able to taste it in this creamy ganache filling.

Almonds. Grind them fine for coating the outside of the classic chocolate truffles. Use other nuts such as pecans, walnuts, or any type of nut you would like. We just have our favorite combination.

Chocolate Truffle Recipe Pro Tips

Melt the chocolate in a microwave. Use a microwave safe bowl and add the chocolate. heat 1 minute at a time stirring between. Generally, this takes about 3 minutes total. Make sure to stir between heatings, if not, I have burned the chocolate before. It seems to need to be moved around a bit to prevent that from happening.

Use a small cookie scoop to make uniform truffles. Just scoop and roll a few seconds in your hand and drop into your favorite outside coating.

Make uniform balls. By using the small cookie scoop and taking a moment longer to roll into a ball shape, the presentation is just that much more visually appealing. using a scoop helps get the job done really fast. I make them into 1-inch balls using a cookie scoop for uniform sizes and a quick way to make these chocolate candies. A melon baller would work as well.

Make sure when using the cookie scoop that you do not dig deep into the chocolate mixture. People that have helped me make these through the years keep breaking my scoops. Argh! Therefore, scrape off the chocolate a little at a time and it fills the scoop quickly without breaking anything.

Warm the heavy whipping cream to room temperature before adding to the melted chocolate. If this step is not done, the chocolate will cool down too quickly and become hard rather than incorporate the heavy cream with the chocolate for a smooth finish.

Cool the truffle mixture until set before starting to make your chocolate truffle balls.

I have a separate bowl of the topping that I want to roll the chocolate balls in. After I drop the chocolate ball in the bowl, I use a teaspoon to roll it around in the topping. Then I set on waxed paper that is on a cookie sheet to set.

Since I usually make these during the winter months the most, I set the cookie sheet in the garage for 30 minutes to set. Then I put in containers or zip lock bags or other pretty airtight container. No matter how you store them, they do not last long.

Chocolate Truffle Variations

Once the chocolate is made and formed into a circle, the possibilities of what you can put on the outside seem to be endless.

  • Use the type of chocolate that you enjoy for your taste buds. If you enjoy white chocolate, make white chocolate truffles. You could make this recipe into a dark chocolate truffle.
  • I have made these scrumptious goodies with cocoa powder on the outside, dipped in melted milk chocolate, white chocolate, and dark chocolate.
  • Try rolling in coconut, or colored chocolate sprinkles.
  • Roll in chopped chocolate.
  • I love crushed almonds as a nut topping. However, I have used pecan, walnut, peanuts, and even macadamia nuts. So good.

For the chocolate truffle filling. You wan swap out the milk chocolate chips for any flavored chocolate chip that you can find; white, strawberry, butterscotch, dark chocolate, or toffee. Every time I go into that isle in the grocery store, there seems to be even more choices.

Budget Friendly Christmas Candy

Truffles around the holidays are a great way to indulge without spending a lot of money. It can be very costly to purchase truffles.

While the chocolate to make this candy is a bit costly, it could be made with your everyday chocolate chips found in the super market. I doubt that anyone could tell the difference.

Ingredients

  • 20 Ounces Melting chocolate I like to use Ambrosia milk chocolate, you can use chocolate chips too
  • 1 Cup Heavy Whipping Cream like the kind you can whip into whipping cream and you find by the dairy case
  • 1 Teaspoon Vanilla
  • 1-2 Cups Almonds finely ground, you can also use pecans, walnuts, or any type of nut you would like

Instructions

  • Melt chocolate in microwave safe bowl 1 minute at a time stirring in between. Normally 2-3 minutes total.

  • Add vanilla to the 1 cup of whipping cream. (I find it mixes best if this is at room temperature). Add this mixture to the melted chocolate. Stir until all mixed.

  • This is the chocolate mixture after the cream has been incorporated. It is now ready to be put into a covered container and chilled for 1 hour.

  • Form into small balls (I normally use a very small cookie scoop for nice even balls and to make them faster). I drop the balls into the chopped nuts, roll them around, and scoop them out using a teaspoon. I put them on a waxed paper lined cookie sheet. Cool. Enjoy!

The recipe I provided above is the family’s favorite version. Play around with what you roll the truffles in to create your own unique taste if you choose. I have used cocoa powder, powdered sugar, colored granulated sugar, various kinds of nuts, coconut, and crushed graham crackers.
