It is very hard to waste food when I think about all that goes into everything we eat; from the farms to our family. Therefore, when I had spaghetti in the refrigerator for four days, I wanted to make something new with it so my family would use it up.
Leftover Spaghetti is Now Simple Baked Spaghetti
Even to make the simple baked spaghetti, I used what I had in my refrigerator. It was extremely easy because everything was already pre-cooked. All I had to do was layer the ingredients into a casserole dish. Now, that is my kind of meal. I did serve a salad along with the baked spaghetti to round out the meal.
Store Leftovers Separately
I store my leftover cooked spaghetti and spaghetti sauce in separate containers in the refrigerator. It lends itself well to this recipe. My spaghetti sauce was a meat sauce.

Combine pasta with a spaghetti sauce, cheese, and bake in the oven until bubbly. The gooey cheesy goodness combined with the fresh sauce and the comforting pasta make just a delicious weeknight meal.

Ingredients
- 8 Oz. Thin spaghetti cooked and drained (mine was previously cooked and in a storage container in the refrigerator)
- 16 Oz. Cottage cheese
- 2 Cups Spaghetti Sauce I used my leftover meat sauce. (Mine was previously cooked and in a storage container)
- 1/4 Cup Parmesan/Romano Cheese Sprinkled on
- 1 1/2 Cups Cheddar Cheese Shredded

Instructions
- Heat oven to 400 degrees. Spray 9X13 pan. Add leftover spaghetti pasts and break apart and cover bottom of pan.
- Add cottage cheese by tablespoons on top all over the casserole dish and spread a bit once all spooned on to help distribute evenly.
- Add the leftover spaghetti sauce by spoonfuls as well. Once on, spread to help distribute evenly.
- Sprinkle on the Parmesan/Romano cheese (yes, the kind in the canister).
- Sprinkle on the shredded cheddar cheese.
- Cover with foil, bake at 400 degrees 50 minutes. Remove foil and bake another 10 minutes. Enjoy!

Ingredients
- 1 pound Ground Beef or Italian Sausage
- 1 Small Onion Diced
- 2 cloves Garlic Minced
- 15 ounces Tomato Sauce Or cooked down tomatoes
- 6 Ounces Tomato Paste
- 2 Teaspoons Italian Seasoning
- 1 Teaspoon Dried Parsley Flakes
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon Granulated Sugar
- Salt to taste
- Pepper to taste
- Pinch Red Pepper Flakes to taste
- 1 Cup Water
- 1/4 Cup Fresh Basil Leaves
- 8 Ounces Tomatoes Diced, optional

Instructions
- Brown meat, onion, garlic, and seasoning over medium-high heat making sure to break up the meat very well. (Drain any fat if necessary).
- Once the meat is cooked through, Add tomato sauce, tomato paste, Italian seasoning, parsley, garlic powder, red pepper flakes, Worcestershire sauce, sugar, salt and pepper to the skillet.
- Add water and bring to a boil. Reduce heat and simmer for 30 minutes. Add basil the last 5 minutes of cooking, if desired. (You can use dried basil. Just reduce the amount to a tablespoon if using dried. Additionally, if using dried, add it when adding the other spices).
- Sometimes, I like to add the 8 ounces of tomatoes the last few minutes. It gives just that extra tomato-fresh taste to the sauce.
