This is a holiday staple in our house. It uses simple ingredients.

To make sweet potato casserole, start by preheating your oven to 350 degrees Fahrenheit. Clean, peel and cut your sweet potatoes into small chunks and boil them until tender.

Drain and mash them in a bowl with a potato masher or hand mixer adding butter, granulated sugar, brown sugar, milk, vanilla extract, and spices like cinnamon and nutmeg.

Spread the mixture into a baking dish. Make the streusel. In a small bowl add the brown sugar, butter, and chopped pecans into small pieces. Add the butter mixture on top of the easy sweet potato casserole.

Bake for 25-30 minutes until the topping is golden brown and the casserole is heated through. Serve hot and enjoy.

P.S. My sister-in-law adds mini marshmallows during the last 15 minutes of baking.

  • ½ Cup Brown Sugar

Sweet Potato Mixture

  • Peel and wash the sweet potatoes and cut them into 1-2 inch pieces.
    4 Medium to Large Sweet Potatoes
  • Add the sweet potatoes to a pot of water and cook over medium heat until tender.
  • Drain the sweet potatoes and mash them with a hand mixer on low or use a large blender or food processor for this step
  • Add the granulated sugar, brown sugar, eggs, milk, cinnamon, nutmeg, vanilla extract, salt, and butter. Beat on low speed until well combined.
    ¼ Cup Granulated Sugar, ½ Cup Brown Sugar, 2 Large Eggs, ½ Cup Milk, ½ Teaspoon Cinnamon, ½ Teaspoon Nutmeg, ½ Teaspoon Salt, 1 Teaspoon Vanilla Extract, 1/2 Cup Butter
  • Preheat oven to 350°F.
  • Pour the mixture into a greased 9×13 inch baking dish.

Topping

  • In a separate bowl, mix the brown sugar, melted butter, and chopped pecans until crumbly.
    ¾ Cup Brown Sugar, 1/3 Cup Butter, ½ Cup Pecans
  • Spread the topping mixture evenly over the sweet potato mixture.
  • Bake for 25-30 minutes, or until the topping is golden brown and the sweet potato mixture is heated through.
