This Cold Veggie Pizza Appetizer recipe is a crowd-pleaser. It can be made for any occasion and it’s always a hit. The best part about the recipe is that you control how much cheese, sauce, and vegetables you put on top. This recipe has got something for everyone.

Many years ago, the first time I tasted this snack was at a neighborhood party. One piece was not enough, and I went back for one more little square. However, I was too late. It was all gone. Apparently, everyone else loved it too. Of course, I asked for the recipe, and I have been making it for parties since.

This wholesome classic is a tried-and-true appetizer recipe that’s been in my recipe box for decades. It is one of my favorites. Start with crescent roll crust, then top it off with a cream cheese spread topped by fresh veggies and a bit of cheddar cheese to complete this tasty treat.

Classic Crescent Roll Veggie Pizza Ingredients

For the crust. The crust is simply two cans of crescent roll dough. Bake this in a half sheet pan and you are all set.

When I made the original recipe years ago, we used to have to join all the crescent triangles together to form the crust. Now, you can purchase the crescent dough sheets and simply unroll and press them in place.

The cream cheese spread. This is made from softened cream cheese, mayonnaise, and a packet of ranch dressing mix or vegetable recipe mix. I have used both successfully.

Fresh vegetables for this cold pizza. Arrange diced vegetables on top of the cream cheese spread. You can add just a scant amount of load it up with quite a few varieties of vegetables. Adding crunchy vegetables makes this so full of flavor and texture.

A Bit More Detail About the Fresh Vegetable Toppings

A general rule of thumb is to have approximately 4 cups of diced vegetables. However, with that said, I love to make sure that there are a lot of them, so I will often add a few more cups. Your guests will have to eat this with a fork then. So, if you want to keep this as finger food, then stay closer to the 4 cups of veggies.

Dice the vegetables quite small. You can save time by using a food processor.

Here are a few great options for you.

  • Cauliflower
  • Broccoli
  • Bell Peppers, can be red peppers, yellow peppers, or green peppers
  • Carrot, shredded or diced
  • Onions, red onions, yellow onions, or even sweet Vidalia onion
  • Green Onions
  • Radishes
  • Cherry Tomato, left whole or sliced in half

The only thing I generally stay away from unless I am serving this right away after making are cucumbers, or other vegetable that could add liquid. It could become soggy.

In general, add your favorite vegetables on top of the pizza. This recipe is a great one to adjust to your personal preference.

Cheese topping. I like to add shredded cheese to my vegetable pizza. Usually it is a cheddar cheese; however, a Colby/Jack, Pepper Jack, Swiss, or Parmesan cheese would work well as a topping. If you prefer, you can leave the cheese off, but we love the addition of it.

How to Make Cold Veggie Pizza Appetizer

Get the oven preheated to 350 degrees Fahrenheit. Spray a half sheet pan (jelly roll pan) with non-stick cooking spray. Unroll two crescent roll sheets and place side-by-side. Joining the seams together by pressing with your fingertips. Note: they will be a bit large for the pan, you can either tuck the ends or cut off the extra dough. Simply make them fit the best you can, it will work out. Bake for 12 minutes. Let cool to room temperature.

In a medium-sized bowl add the softened cream cheese, mayonnaise, and a packet of ranch dressing mix or vegetable recipe mix. Spread this mixture on top of the cooled crust.

Dice the vegetables and layer on top of the cream cheese mixture.

Shred the cheese and add on top of the vegetables.

This easy appetizer can be served right away.

Nutritious Snacking Food

Easy recipes like this makes a perfect snacking food. It will last in the refrigerator up to 4 days. Just place in an airtight container. A great food option for when you are hungry and just need a little something to hold you over until mealtime. I bring it to work for a light lunch too.
