We love May and June in our area because the strawberries are ripening. It is the perfect time of year to get those fresh and juicy strawberries. We enjoy a lot of salads throughout the year; however, the spring time seems to bring so many fresh-from-the-garden flavors.
You can buy strawberries any season of the year in most grocery stores and make this salad year-round. But, it just seems when you can get them in season, the prices are better and they just seem to taste better too.
What are Spring Mix Greens?
Bags of “spring mix salad greens” are often available year-round. Ideally, these mixes are a combination of different baby lettuces along with a bit of arugula, spinach, and/or baby chard.(source)

How to Store Spring Mix Salad Greens
Because the greens that make up spring mix salad are not fully matured, they are also more fragile. This means that they bruise easier, and are more susceptible to heat.
The best way to protect and prolong the life of your greens is by storing them in a large container lined with damp paper towels. If you wrap the leaves in a totally dry paper towel, the moisture from the leaves will be absorbed more quickly, and the leaves dry out. (source)

- 4-6 Cups Spring Mix Salad Greens Or other Salad Green You Like
- 24 Strawberries Sliced
- 4 Oz Feta Cheese Crumbled
- 1 Cup Walnuts
Balsamic Vinaigrette Salad Dressing
- 2 Tbl. Light Olive Oil
- 2 Tbl. Sugar
- 2 Tbl. Balsamic Vinegar
- 2 Tbl. Light Soy Sauce
- Salt To taste
- Pepper To taste

Instructions
- Combine all the ingredients for the salad in a large bowl. Very lightly dress the salad right before serving, reserving the rest of the dressing on the side for people to add more.
- If you want the salad to have a pretty presentation. Dress the spring mix and add the strawberries, Feta cheese, and walnuts on top. Just looks prettier.
Balsamic Vinaigrette Salad Dressing
- Add all ingredients to a bowl and use a whisk to mix. Or you can add all the ingredients into a jar and shake to mix.
- Use immediately or store in the fridge for up to a week.
