Often, Bruschetta is served at parties. Traditional Bruschetta is a delicious combination of tomatoes, garlic, olive oil, fresh basil, with a bit of salt and pepper spooned over toasted bread baguettes.

Well, this is a twist on that recipe. Enjoy all the fresh ingredients over pasta and add chicken for a healthy and quick meal.

This Italian Chicken Pasta Salad is easy and ready in under 30 minutes. Summer is a perfect time to serve this no-fuss meal or salad.

This is one of those recipes that is delicious the first day when it is served warm, yet even better the next day once all the flavors have melded together. It is a perfect lunch to bring to work as it tastes wonderful cold too.

Bruschetta Chicken Pasta Ingredients and Substitutions

Chicken. Chicken breasts are a lean choice for this recipe. However, the thigh meat, which is the dark meat, would be another great option. If you are short on time or feeding a crowd, add more chicken. I have added a rotisserie chicken to this recipe. Just cook the meat in the seasonings a few minutes and carry on with the rest of the recipe.

Balsamic Vinegar. The taste of balsamic vinegar can be a bit overpowering for some people. Therefore, a few other options to try are apple cider vinegar and rice vinegar. They can be used in combination with the balsamic vinegar or in place of. Try out a few and see what fits your taste buds the best.

Pasta. I like the long thin angel hair pasta best for this recipe. However, spaghetti or linguine work just as well. If you prefer a shorter pasta, give gemelli, penne, or cut spaghetti a try

Tomatoes. This recipe calls for Roma; however, plum, cherry, or grape tomatoes can also be used. You can really use any type of tomato; this recipe is not fussy. If you do, make sure that if your tomato has a lot of seeds, that you remove those as the excess water can affect the recipe.  

Onion. I use red onion diced in this recipe. Other options are shallots, green, or Vedalia onions.

Garlic. Fresh or jarred work well for this recipe. Keep things simple and use what you have on hand.  

Olive Oil. I use olive oil in many of my recipes and have a bottle sitting on my counter for easy use. If you prefer other oils such as a vegetable, grapeseed, or other neutral tasting oil, go ahead and use that.

Italian Spices. This recipe calls for both dry and fresh herbs, I like the combination of the dried herbs and fresh. If you decide to use all dry or all fresh, that is perfectly fine. When using fresh herbs just remember that you should add twice as much as dried.

Parmesan Cheese. Fresh parmesan is recommended, but if you only have the kind that you shake on from the container, no worries, use that. If you happen to have the time to plan, this is a great recipe to try out some specialty cheeses. Those little cheeses that often come in little wedges would work great for this pasta recipe: Romano, Fontina, or Asiago.

Storing and reheating

You can store the leftover pasta in the fridge up to 5 days. That means this is a great dish to meal prep as lunch or dinner for the whole week!

To reheat, sprinkle some water overtop prior to microwaving (to avoid the pasta from drying out) and then microwave for 1-2 minutes. To make this pasta taste as good as new, add some freshly grated parmesan cheese overtop and then add some fresh basil overtop.

Recently, I was at a friend’s cabin and the weather was gorgeous and we spent a few hours on the water enjoying the sun in the pontoon boat.

When we returned to the cabin, a few of us made this chicken pasta salad recipe. We had a lovely time making it with lots of chatting and laughter. It is one of those no-fuss, easy recipes that comes together quickly, yet feeds a crowd if needed.

Bruschetta Chicken Pasta

Ingredients

  • 1 Pound Spaghetti I prefer the thin. Cooked according to package directions

Prepare the Chicken

  • 1 Tablespoon Olive Oil
  • 1 Pound Chicken 4 large breasts or rotisserie chicken diced up
  • 2 Teaspoons Italian Seasoning
  • 1 Teaspoon Garlic Powder
  • Salt to taste
  • Pepper to taste

Prepare the Sauce

  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Garlic Minced
  • 2 Tablespoons Red Onion approximately ½ an onion finely diced
  • 8 Roma Tomatoes Diced. Can use any other tomato, just remove seeds if there are a lot.

Assemble the Chicken Pasta Salad

  • 2 Tablespoons Balsamic Vinegar
  • ½ Cup Parmesan Cheese grated grated, plus more as a topping when serving
  • 2 Tablespoons Fresh Basil Can use Parsley Chopped
  • Salt to taste
  • Pepper to taste
  • Balsamic Glaze Drizzle over the top when serving

Instructions

  • Cook the pasta according to the directions on the package. Drain and rinse in cold water. Transfer to a large mixing bowl and set aside.

Prepare the Chicken

  • In a small bowl, combine the Italian seasoning, garlic powder, salt and pepper. Mix and season both sides of the chicken. Heat 1 tablespoon of the oil in a skillet and sear the chicken breasts over medium-high heat until booked through and golden brown on the outside. Remove from the pan and allow the meat to rest.

Prepare the Sauce

  • In the same pan, add another tablespoon of olive oil and sauté the garlic and red onion until you can smell the garlic. This should take 1-2 minutes. Turn off the heat and add the tomatoes gently tossing to combine. Add this mixture to the pasta.

  • Add the vinegar. , parmesan cheese and fresh basil or parsley to the pasta dish. Season with salt and pepper to taste.

  • Add fresh shredded parmesan cheese and fresh basil or parsley to the pasta dish. Season with salt and pepper to taste.

Assemble the Chicken Pasta Salad

  • Slice the chicken and add to the pasta. Toss to combine. Top with additional parmesan cheese and balsamic glaze.
