This zesty dressing can be used to marinate the cucumbers and other vegetables. Or, if you are like me, they only get a chance to marinate about 5 minutes! I know they will be better if I do let them marinate for a few hours.

However, when I get home from work, this is a quick and easy recipe. I am so hungry and this is so good that I sometimes; eat the whole bowl as a meal, and don’t wait for the marinate to do its magic

Believe me. This cucumber salad is Yummy.

Marinated cucumber salad is a delicious complement to almost any meal. Especially in the summer when the produce is abundant.

This salad is a little bit sweet, salty, acidic, tangy, and has a smidge of heat. The combination of spices is easy and these are pantry staples in my home; therefore, this recipe can be whipped up in jiffy at my house. Well, as long as I have the fresh veggies.

Pole Cucumbers versus English Cucumbers

Common Cucumber Readily Available

Pole Cucumbers are often found year-round in our local grocery stores. While I have used these in many recipes and salads, they are not my first choice. Why? Because these are waxy, thick-skinned, extra watery, and a little bitter. I find that if I don’t remove the outer skin, their bitterness can take over a recipe.

However, when the skin is removed, then they are a bit bland. Therefore, they are not my first choice.

I will get them if there is nothing else or they are the freshest cucumber in the store. Often those cucumbers I will peel, cut in half, and cut out the seeds as I think the seeds are too big for my preference.

On the other hand, if there are fresh English cucumbers near by, I grab those instead.

Why Do I Like English Cucumbers?

English Cucumbers; I just happen to like them better because they have a thinner skin, smaller seeds, and are a bit crunchier than the Pole Cucumber. There is also like the uniformity of the cucumber.

The English cucumber has a thin layer of plastic to protect it. I believe that is to protect it a bit more because the skin is a bit thin. Sometimes I peel them and other times, I do not peel the cukes. This cucumber is less bitter; therefore, they are perfect for salads or this delicious recipe.

A Quick Word about Rice Vinegar

You can certainly substitute out the rice vinegar for apple cider vinegar in this recipe; however, I think that the apple cider vinegar kind of takes over the recipe flavors. Therefore, I prefer the rice vinegar in this recipe. If you are not familiar with rice vinegar, this is the kind that I use. I am able to purchase it at my local grocery store.

Ingredients

  • 1 Cucumber I use English cucumbers if I have them.
  • 1/2 Tsp. freshly Squeezed Lemon
  • 1 Tsp. Olive Oil
  • 1 Tsp. Rice Vinegar
  • 1 Tbl. Granulated Sugar
  • 1/2 Tsp. Chili Powder
  • To taste Salt about 1/8 Tsp.
  • To taste Pepper about 1/8 Tsp.
  • 1/2 Cup Tomatoes I like cherry tomatoes or diced tomatoes
  • 1/2 Cup Onion I like to use Sweet Vidalia Onion if I have that. Red or Yellow onion work too.

Instructions

  • Either fully or partially peel the cucumber and slice. I use one whole English cucumber for this recipe if I have it on hand. Put this in a medium sized bowl so you can mix the ingredients easily.
  • Add the lemon, olive oil, rice vinegar, sugar, chili powder, salt, and pepper. Mix and if you can, let marinate 2 hours before eating so the dressing has a chance to do its magic. Serve.
  • This can be made with just the cucumber, or you can add tomatoes and onions for even more flavor. We enjoy this salad both ways.
